chicken chili: Pinterest tested



The chicken chili I mentioned (here) is delicious. I really love it. So much that I am cooking it again soon. It is perfect for a cold winter  grey days  and came together really fast.

Original recipe here but I modified it and simmered it on the stove for an hour instead of the crockpot.

Very highly recommend.

Walmart Haul



I feel like all of my random shopping trips can start with the sentence.... I was at Wal-Mart late at night and...

Confession time: 

This is the second time for me to buy this color (long shot) in Revlon Gel Envy  My friend complimented me on the color and I gifted it to her. Then I missed it.

I eat the Gummy Vitamins like candy. I can justify it because I'm getting 500% daily Vitamin C and D when I feel like I'm just eating candy.

The Ensure Active is the perfect afternoon snack. Its got 25g protein and its cold and chocolate, which is the important part.

Nature Box subscription


After a few boxes of snacks that did not excite me, I briefly considered cancelling this Naturebox subscription. But, I added it up. Its about $2.50 a bag for the snacks, I can go on the website and chose what I get, and they will replace anything I do not like with something different. 

I've determined the dried fruit and the nuts are my favorite.

homemade quacamole: very easy

I frankly dont even think it is a recipe. I honestly think I was expermenting one day and just experimented until I got it right.

I cant remember. But I've been making this for quite a while, and it is the perfect thing to take to a party. Everyone loves it. It taste "fresh" and healthy.

Here is what I do:

one or two ripe avocados
half a lime squeezed in
chopped cilantro
salt and pepper (generous amounts of each)
a roma tomato or two chopped
some purple onion
chopped garlic (sometimes I put it in, sometimes not)

Then I squish it all together with the back of a spoon.

Smoothie breakfast with Nutri-Ninja

 
 
 
My breakfast is basically throwing things in the nutri-ninja (maybe my best purchase ever!)  and seeing how it taste. I usually throw in some protein powder, but I am currently out of it. This morning's concoction:
A splash of milk
Tablespoon or two of Greek Yogurt (Fage plain is my favorite)
Banana
Half an Apple
Handful of spinach
Frozen blueberries

Simple Woman daybook: February 4, 2015

Today:
Yesterday something became completely, conclusively, painstakingly and finally over. For the first time in a while, I woke up easy and happy. I went to bed thinking of something else in the very early stages of developing. I woke up from a dream about building a house, and designing all the rooms in detail, walking through it, decorating it, and most of my family was there. I'm not sure what it means or if it means anything, but I think it greatly contributed to me waking up happy.

Outside my window:
It is the perfect day for staying at home, with an electric blanket and candles burning, with a dog at my side on the couch and looking out on the cold rain. But, that is not what I am doing today. I am doing the exact opposite of that today.
 
In the kitchen:
Chicken chili.  Details to follow.

I am looking forward to:
Mardi Gras, the end of king cake season and a 4 day weekend. Last year I completely left anything Mardi-Gras related in favor of friends in Boston, and it is pretty appealing this year, but my fear of flying into massive snow storms is winning over my travel bug and I instead will been enjoying 4 days focused on errands and things at home.

I've set a goal to read more this year (20 books), which is greatly assisted by both audio books from the library and subscribing to audible. My current (and sixth) book is "Orange is the new black, my year in a woman's prison"I also have a goal to be in continuous Bible study (which also counts as my seventh book). Right now, its "Hebrews, the nearness of King Jesus" by Lisa Harper. I don't want to get too optimistic, but I am blowing through this reading goal.

I am planning:
  • My four day weekend in my head
  • What I'm going to cook this weekend
  • A chandelier to replace the light fixture in my bedroom
  • February goals, still a little up in the air

Listening to:
Kerry Washington as Olivia Pope. Already a Classic. The spot is earned.On repeat in my life right now:

I am watching: 
I'm asking myself almost every day, am I too late for the Scandal bandwagon? I've heard others rave about it, but still managed to avoid it. I "accidentally" watched one episode. (it was on when I was doing something else and I was too lazy to turn the TV). Now, I am seriously wondering if I can take the time out of my life to get caught up and watch all 5 past seasons? I'm not sure I can emotionally invest myself in it but I am heavily leaning to giving it a try.

A few things I love in January

Two of my favorite finds in January:


illuminators may be my favorite makeup thing in the world, and this new set by Becca is my favorite of the many illuminators I have met and loved. Emily Noel recommend it (here and here and here) so highly, and Ulta had a special,  which combined forced to give it a try and I love it so much I can declare it was one of the best things to happen to me in January! too strong? maybe. but I do love it.



 
 
Its also no secret that me and Bath and Body Works have a thing going on. But, I spent way too much time in the candle section to  have any energy left over for the body lotions and gels.  Until I found this on my secretaries desk, started using hers daily and then wondered in the aromatherapy section,  which frankly, at $13 to $15 each, has caused me another problem in life. Now, I'll be chasing these lotion deals like I chase the candle deals.
